Yes, as your students work on an Easel Activity, their progress will be automatically saved. However, once a student clicks the “Turn In” button, they will not be able to open the Easel Activity again until you return it to them. So, if a student would like to complete an activity at a different time, they can simply close the activity and return to it later.
